Gilmore Girls Coffee Cake Cookies

Ingredients

Cookie Dough:
  • 120g unsalted butter, softened
  • 80ml sunflower oil
  • 170g light brown sugar
  • 1 large free-range egg
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 tsp baking powder
  • 350g plain flour
Streusel Topping:
  • 50g unsalted butter, softened
  • 40g light brown sugar
  • 75g plain flour
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
Icing Drizzle:
  • 100g icing sugar
  • 1 tsp water

Instructions

Make the Cookies

Heat your oven to 175°C, then line two baking trays with parchment paper. Set them aside.

In a stand mixer fitted with a paddle (or with a hand mixer), beat together the butter, sugar, and oil until the mixture becomes pale and creamy.

Add the egg and vanilla, blending until the mixture looks smooth.

Tip in the flour, baking powder, and all the spices. Mix just until everything comes together—don’t overwork it.

Pop the dough into the fridge for 1 hour to firm up while you prepare the streusel.

Make the Streusel

Place the butter, sugar, flour, and spices in a bowl.

Use your fingertips to rub everything together until you get a sandy, crumb-like mixture. It should clump if you squeeze it lightly.

If it feels too moist, sprinkle in a little extra flour (about a tablespoon at a time) until it reaches the right texture.

Shape & Bake

Take the chilled dough out of the fridge. Scoop it into even mounds using a cookie scoop, or roll golf-ball sized portions by hand. Arrange them on the prepared trays, leaving about 2 inches of space between each for spreading.

Press a small indent into the center of each dough ball and pack the cavity generously with streusel—more than you think you need, as the cookies will flatten in the oven.

Bake for 13–15 minutes, or until they turn a warm golden color.

Let them cool on the baking tray for 5 minutes before moving them to a wire rack to finish cooling.

Add the Icing

Mix the icing sugar and water in a small bowl until it forms a smooth, pourable glaze. Add more sugar if it’s too runny, or more water if it’s too thick.

Drizzle over the cooled cookies using a spoon and allow the icing to set.
