Ingredients
Chicken
- 4 boneless, skinless chicken thighs
- 1 tbsp lime juice

- 1 tsp chili powder
- 1 tsp cumin

- 1 cup corn kernels
- ¼ cup sliced red onion
- 1 cup sour cream
- 2 tbsp mayonnaise
- ½ cup cotija cheese
- 1 tsp chili powder
- Salt & pepper
- 1 lime
Base
- 3 cups cooked rice
- Fresh cilantro
Instructions
- Mix lime juice, oil, spices, and garlic. Coat chicken and marinate 20 minutes.
