Ingredients
- 14.4 oz graham crackers
- 3 cups cold whole milk
- 6.8 oz (2 boxes) instant lemon pudding mix
- 8 oz whipped topping (thawed)
- 32 oz premade lemon frosting
- 15 lemon slices (optional)
- Fresh mint leaves (optional)
Instructions
- Prepare a 9×13-inch baking dish by lightly coating it with nonstick spray to prevent sticking.
- Arrange a single layer of whole graham crackers across the bottom of the baking dish. Break pieces if needed to fully cover the surface.
- In a large mixing bowl, pour in the cold milk. Add both packages of instant lemon pudding mix. Using a hand mixer, beat the mixture on medium speed for about 1½ to 2 minutes until it thickens to a smooth pudding consistency.
- Gently fold the whipped topping into the pudding mixture using a spatula. Continue folding until fully combined and creamy.
- Spoon half of the pudding mixture over the graham cracker layer. Spread it evenly using an offset spatula to create a smooth surface.
- Add a second layer of graham crackers directly on top of the pudding layer.
- Spread the remaining pudding mixture evenly over this second cracker layer.
- Finish with a final layer of graham crackers on top.
- Remove lids and seals from the lemon frosting containers. Microwave for about 45 seconds until softened and pourable. Stir until smooth.
- Pour the melted frosting over the top layer and spread evenly with a spatula to fully cover.
- Place the dish in the refrigerator and allow it to chill for at least 8 hours or overnight so the layers soften and set.
- When ready to serve, slice into squares. Garnish each piece with a lemon slice and mint leaves if desired.
