Ingredients
Chicken tenders:- 2 large eggs
- 1 cup blanched almond flour
- 1 tablespoon garlic powder
- 1 tablespoon dried parsley
- 2 teaspoons smoked paprika
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 12 chicken tenders (about 1½ pounds)
- Olive oil spray
- 2 tablespoons butter
- ¼ cup hot sauce
- 1 tablespoon honey
- 1 tablespoon tomato paste
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
Instructions
- Prepare the coating. Crack the eggs into a shallow bowl and season lightly with salt and pepper. In another shallow dish, stir together the almond flour, garlic powder, dried parsley, smoked paprika, and remaining salt and pepper until well mixed.
- Coat the chicken. Working one piece at a time, dip each chicken tender into the egg mixture, letting any excess drip off. Press it into the seasoned almond flour until fully coated. Place the breaded chicken onto a clean plate and repeat with the remaining tenders.
- Air fry the chicken. Heat the air fryer to 390°F and lightly spray the basket with olive oil. Arrange the chicken tenders in a single layer and mist the tops with more olive oil spray. Cook for 7 minutes, then flip each piece, spray again, and continue cooking for 4 to 5 minutes, or until crispy and fully cooked. Work in batches if needed to avoid overcrowding.
- Make the sauce. While the chicken cooks, melt the butter in a small saucepan over medium heat. Stir in the hot sauce, honey, tomato paste, salt, and pepper. Whisk until smooth and let the sauce simmer gently for 2 to 3 minutes. Remove from heat.
- Finish and serve. Transfer the cooked chicken tenders to a serving plate and drizzle the warm sweet and spicy sauce over the top. Serve immediately and enjoy while hot.
