Creamy vanilla yogurt meets warm roasted peaches and crunchy homemade maple granola in this simple bowl that feels indulgent but stays light. Perfect for breakfast, a midday bite, or a healthier dessert moment.
Ingredients
Maple Granola- 1½ cups rolled oats
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- Small pinch of salt
- ½ cup shredded coconut (sweetened or unsweetened both work)
- ⅓ cup chopped pecans
- 2 tablespoons olive oil
- ⅓ cup maple syrup
- ½ teaspoon vanilla extract
- 2 tablespoons almond butter
- 3 medium peaches
- 3 tablespoons sugar
- Vanilla yogurt, for serving
Instructions
Granola- Start by heating your oven to 325°F. Prepare the maple granola following your preferred homemade method, mixing the oats, spices, coconut, nuts, and wet ingredients until evenly coated. Spread on a baking sheet and bake until golden and crisp.
- While the granola is in the oven, slice the peaches and place them in a bowl. Sprinkle with sugar and gently toss. Let them rest for about 10 minutes so the juices release naturally. Line a baking sheet with parchment paper and spread the peaches out in an even layer.
