Ingredients

  • 4 packets ramen noodles, seasoning packets removed
  • 4 tablespoons butter
  • 4 garlic cloves, finely chopped
  • 4 teaspoons fresh or paste ginger
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons brown sugar
  • 1–2+ teaspoons sriracha, to taste
  • 4 green onions, thinly sliced
  • 4 eggs
  • Everything seasoning, for topping

Instructions

  1. Bring a large pot of water to a boil. Add the ramen noodles and cook for about 2 minutes, just until tender. Drain well and set aside.
  2. In a small bowl, stir together the soy sauce, water, brown sugar, and sriracha until fully combined. Set aside.
  3. Heat a large skillet over medium heat and melt the butter. Once melted and lightly foaming, add the garlic and ginger. Cook for about 1 minute, stirring constantly until fragrant.
  4. Increase the heat to medium-high and pour in the soy sauce mixture. Let it cook until bubbling, about 1 minute. Add the drained noodles and toss until evenly coated in the sauce.
  5. Reduce the heat to medium and move the noodles to one side of the pan. Add a little extra butter if needed. Crack the eggs directly into the open space for fried eggs, or whisk the eggs with a splash of water and pour them in to scramble.
