Ingredients

For the chicken:
  • 4 small-to-medium boneless, skinless chicken breasts (or 2 large, halved)
  • 1 tablespoon dried basil
  • 1 tablespoon garlic powder
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 tablespoon ghee or olive oil
For the creamy sauce:
  • 1 tablespoon ghee or olive oil
  • 3 cloves garlic, minced
  • 1 yellow onion, finely diced
  • ¼ cup chicken broth
  • 1 can (13.5 oz) unsweetened full-fat coconut milk (Thai Kitchen recommended)
  • Juice of ½ lemon
  • 1 tablespoon arrowroot starch
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 can (14 oz) quartered artichoke hearts, drained and chopped
  • 2 cups packed fresh spinach
  • Red pepper flakes, for garnish

Instructions

  1. Pat the chicken dry and season both sides with basil, garlic powder, salt, and pepper. Heat ghee (or oil) in a skillet over medium heat. Cook the chicken 6–8 minutes per side, until golden and cooked through. Transfer to a plate.
  2. Using the same skillet, melt a bit more ghee if needed. Sauté garlic and onions for 1–2 minutes, until fragrant and slightly softened.
  3. Pour in the chicken broth, coconut milk, lemon juice, arrowroot starch, salt, and pepper. Whisk until smooth, then simmer 2–3 minutes until the sauce thickens. Reduce heat to low.
  4. Stir in the artichoke hearts and spinach until the spinach wilts. Return the chicken to the skillet and spoon the sauce over the top.
  5. Sprinkle with red pepper flakes and serve immediately.
